Plant based blueberry vegan pancakes

Plant-based vegan blueberry pancakes Source: Serving size: 2 Prep time: 15 mins Cook time: 10 mins

Ingredients

  • Blueberries 1 cup

  • Vanilla 1tsp

  • Plant based milk 1 cup + extra if batter is thick

  • Chia seeds 1 tsp

  • Oats 1/4 cup

  • Whole-wheat flour 1 cup

  • Cinnamon 1tsp

  • Baking powder 1tsp

  • Maple syrup to taste

Directions

  • Heat non-stick pan or griddle on medium high heat. Add dry ingredients to a bowl. Then whisk in wet ingredients until all is incorporated. If batter is to thick add more milk until it's the right consistency. Cook pancake on one side until the batter is bubbly and the edges are brown. Then flip and cook for 3 more minutes.

  • Enjoy with maple syrup.

Notes

  • This recipe is free from animal products, dairy , eggs,nuts and oils.

  • You can use any kind of milk or flour you want.

  • Fresh picked berries tasted better in my opinion but frozen or organic work as well.

  • You can sub chia seeds for ground flaxseed.

  • Makes 4-5 pancakes. You can wrap in freezer safe wrap and freeze for up to a month for an easy breakfast prep
