Vegan lemon blueberry muffins



Ingredients

1cup almond milk

1tbsp apple cider vinegar

1 lemon juiced and zested

1tsp vanilla

1/2 cup vegetable oil

1/2 cup coconut yogurt ( I use so delicious)

2 cups all purpose flour

2.5tsp baking powder

1/4 tsp baking soda

1/2 tsp salt

1/2 cup granulated sugar

1 pint of blueberries


Steps: preheat oven to 350° and greese a 12 cup muffin pan.

In a medium bowl or measuring cup add all wet ingredients and mix well. In a large bowl add dry ingredients including lemon zest.

Add wet ingredients to dry. Mix until there are no lumps. Fold in washed pint of blueberrie.

Scoop batter into muffin tins about 3/4 way full. Bake for 24 minutes until a tooth pick inserted into the middle comes out clean.
